The juniper is uncharacteristically soft, riding in a floral wave of geranium and rosewater. No one but Rabbit Hole finishes gin in Kentucky rye whiskey barrels. The effect is sublime. Layers of white pepper and coriander and the faintest touch of wood leading to a citrus finish, and a nearly irresistible desire to take another sip. Nose: Rabbit Hole Bespoke Gin has a clean aroma that is delightfully complex with a bit of tannic citrus noticeable against the well-known taste of the base gin. Palate: The palate has more of the citrus but it is in a nice balance with the still juniper-forward taste. Finish: Its finish is characteristically dry and full of juniper and a touch of licorice. Rabbit Hole Distillery founded by Kaveh Zamanian is a Kentucky-based bourbon and whiskey distiller, inspired by modern approaches to whiskey making.
