Distilled in a marvellously compact pot still / column still combo named Prudence, Sipsmith epitomises distilling on a truly artisinal scale. At the time of her installation, Prudence was the first copper pot still to be brought to life in London for over 200 years. Nose: Orange sherbet, rounded juniper warmth, fragrant grassy herbs. Palate: Juniper builds on the palate, with subtly spicy flashes throughout, mellowed by creamy citrus. Finish: Well-balanced on the finish, with drying juniper and tangy lemon.
