Distiller Rachel Hall is the custodian of a recipe perfected over many years that includes nine botanicals twice distilled and then perfectly blended with water filtering from high in the Remutaka Ranges and emerging in a spring at Palliser Bay. Nose: It has very pleasant and lovely aromas. Palate: Silky smooth character that lifts the botanicals to bold new heights. Finish: Impressive length on the finish, very unique and complex. Lighthouse Gin was established in 2005 by founder and original Master Distiller, Neil Catherall, who spent over 5 years developing his custom 200-liter copper still and his unique botanical formula to craft small batch gin.
