Distilled in 2007, it was then set aside to mature in ex-bourbon barrels for 13 years. Following that, the rum was transported to France for a finishing period of one year in Maison Ferrand French oak casks, and then finally bottled up at 49.3% ABV. If you're curious about rum from Australia, here's a delicious chance to get your hands on some! Nose: Chocolatey, with hints of red berries and cooked apricot. Palate: Delicately floral too, with a smidge of vanilla blossom and lavender working its way in there. Finish: Quite long and warm.
